Delicious quinoa steaks – a tasty and simple alternative for a vegetarian meal

“2013 was named ‘The International Year of Quinoa’ by the UN to raise awareness of this incredibly nutritious little seed that has been used for thousands of years in certain cultures.”

 

Although you might think that quinoa is something new and trendy, this little seed has been used for millennia in places like Bolivia, Colombia, Ecuador, and Peru. Nutritionally, quinoa is a real treasure that now has a very special place in my cooking. Not only are the seeds incredibly tasty with their nutty flavour, they’re easy to use in a variety of ways. Quinoa is one of the few foods from the plant kingdom that contains all the vital amino acids used to build proteins that, in simple terms, are the building blocks of the body. This means that you don’t need other foods to supplement any amino acids when eating a vegetarian meal. Quinoa is also rich in intestinal-friendly dietary fibre, which contributes to more stable blood sugar levels. This fibre feeds our good intestinal bacteria and thus helps to create a healthy intestinal environment. Modern research increasingly supports the idea that a balanced intestinal flora can have a positive effect on our immune system and mental health. By eating quinoa regularly, you also get many important vitamins and minerals such as folate, iron, zinc, and magnesium. The fact that quinoa is also gluten-free means that most people can use it. An added bonus is that quinoa can be boiled and then stored for up to five days in the fridge. It can then be easily used in things like salads, tomato sauce, or porridge. Quinoa steaks with sweet potato boats

4 to 5 portions

 

Quinoa steaks

Ingredients:

  • 400 ml unboiled quinoa

  • 1 onion

  • Olive oil

  • 3 tbsp finely chopped red pepper

  • 2 tbsp lemon juice

  • 200g feta cheese

  • 4 small eggs

  • 1 serving of lemon balm

  • Salt

Method:

  • Boil the quinoa according to the instructions.

  • Finely chop the onion and lightly brown in olive oil.

  • Mix the quinoa, browned onion, finely chopped pepper, and lemon juice. Crumble in feta cheese and mix in the eggs. Mix together.

  • Finely chop the lemon balm and stir in.

  • Shape into small steaks and fry lightly in olive oil.

 

 

Sweet potato boats

Ingredients:

  • 2 sweet potatoes

  • Salt

  • Dried thyme

Method:

  • Set the oven to 180 degrees

  • Rinse, peel, and cut the sweet potatoes into boats.

  • Place the potatoes onto parchment paper on a baking tray, drizzle with olive oil, and sprinkle with salt and thyme.

  • Put in the oven for 15 to 20 minutes.
